The ribbed side is perfect for getting those char lines on veggies and steak, and the smooth side handles a full batch of pancakes without a single stick. Flipping it mid-cook is a little awkward with the handle, but the versatility makes up for it.
Pulled the smooth side out for eggs and fajitas this weekend, and the heat retention is spot on — everything cooked even without hotspots. Flipping it for the ribs side takes about two seconds, which makes it feel like two pans in one.
